Ingredient

  • 1000 gram flour (Balance, Golden Buffalo or Hoa Ngoc Lan)
  • 460 gram water
  • 140 gram sugar
  • 15 gram salt
  • 20 gram dry yeast
  • 30 gram baking powder
  • 60 gram milk powder
  • 120 gram egg
  • 190 gram butter

Tool

  • A mixer
  • A rolling machine
  • A frying pan
  • A scale
  • Mix all ingredients except butter at low speed for 1 minute.
  • Add in butter and mix at high speed for 5 minutes.
  • Resting for 30 minutes.
  • Put the dough through rolling machine until the surface is smooth.
  • Roll it into a sheet of 1 cm thick then do the cutting (round or stick).
  • Proofing on the tray scattered with dry flour to prevent the dough from stick to the tray for 30 minutes.
  • Deep frying in boiling oil until cooked.
  • Decorate the doughnut with icing sugar or chocolate.
