- 1000 gram flour (3 Blue Roses, Hoa Ngoc Lan)
- 30 gram baking powder
- 160 gram sugar
- 60 gram shortening
- 470 gram water
- 6 gram dry yeast
Tool
- A steam pot or steaming cabinet
- A mixer
- A rolling machine
- A scale
- Dissolve sugar in water.
- Pour flour, dry yeast, baking powder and the above solution in the bowl and mix it at low speed for 5 minutes.
- Rest the dough on the table for 25 minutes.
- Pass the dough through rolling machine for 30 times until developed (become flexible and smooth).
- Divide the dough into pieces of 45 gram each and do the rounding.
- Proofing for 80 – 100 minutes.
- Steaming for 12 minutes.
