Ingredient

  • 1000 gram flour (3 Blue Roses, Hoa Ngoc Lan)
  • 30 gram baking powder
  • 160 gram sugar
  • 60 gram shortening
  • 470 gram water
  • 6 gram dry yeast

Tool

  • A steam pot or steaming cabinet
  • A mixer
  • A rolling machine
  • A scale
  • Dissolve sugar in water.
  • Pour flour, dry yeast, baking powder and the above solution in the bowl and mix it at low speed for 5 minutes.
  • Rest the dough on the table for 25 minutes.
  • Pass the dough through rolling machine for 30 times until developed (become flexible and smooth).
  • Divide the dough into pieces of 45 gram each and do the rounding.
  • Proofing for 80 – 100 minutes.
  • Steaming for 12 minutes.
