Ingredient

  • 180g Hoa Ngoc Lan Wheat Flour
  • 4 Ripe Bananas
  • 30g Brown Sugar
  • 100g Eggs
  • 60g Butter or Cooking Oil
  • 2g Vanilla
  • 2g Baking soda
  • 2g Baking powder
  • 50g Raisins

Tool

  • Air fryer
  • Mixing bowl
  • Bowl for dry ingredients
  • Kitchen scale
  • Whisk or electric mixer
  • Banana masher or fork
  • Mixing spoon or spatula
  • Paper muffin cups

  • Step 1: Mash the Bananas

Peel the bananas, cut them into small pieces, and mash them thoroughly in a mixing bowl.

  • Step 2: Combine the Dry Ingredients

Measure the Hoa Ngoc Lan wheat flour, baking soda, and baking powder into a bowl. Mix well to distribute the raising agents evenly.

  • Step 3: Prepare the Batter

Combine the melted butter or cooking oil, brown sugar, and eggs in a mixing bowl. Beat until well combined. Add the dry ingredients and mix gently. Finally, add the mashed bananas and vanilla, stirring until the batter is uniform. Avoid overmixing once the flour has been added.

  • Step 4: Fill the Muffin Cups

Divide the batter among the paper muffin cups, filling each approximately two-thirds to three-quarters full to allow room for rising. Sprinkle the raisins over the tops.

  • Step 5: Bake in the Air Fryer

Preheat the air fryer if required by the appliance instructions. Arrange the muffin cups in the air fryer and bake at 150°C for approximately 25 minutes. Check for doneness by inserting a toothpick into the center of a muffin. The muffins are ready when the toothpick comes out clean or with only a few dry crumbs.

  • Step 6: Cool the Muffins

Remove the muffins from the air fryer and let them cool for a few minutes before transferring them to a plate or cooling rack.
