Ingredient
- 100g Hoa Ngoc Lan No. 11 Wheat Flour
- 30g Butter or Cooking Oil
- 2g Salt
- 30g White Sugar
- 30g Unsweetened Fresh Milk or Water
- 1 Egg
- 2g Baking Powder
- 3 Eggs
- 50g Grated Cheese
- Spring Onions, Ground Black Pepper
Tool
- Air fryer
- Rectangular aluminum baking mold (12 × 5 × 5 cm)
- Mixing bowl
- Kitchen scale
- Whisk or electric mixer
- Flour sieve
- Mixing spoon or spatula

- Step 1: Prepare the Batter
Combine the sugar, 1 egg, and salt in a mixing bowl. Beat until well combined and slightly pale. Add the melted butter or cooking oil and the unsweetened fresh milk or water, then mix well. Sift in the Hoa Ngoc Lan No. 11 wheat flour and baking powder. Stir until the batter is smooth and uniform.
- Step 2: Fill the Molds
Pour the batter into the aluminum molds, filling each approximately halfway to leave room for the batter to rise and the toppings.
- Step 3: Add the Toppings
Sprinkle the grated cheese over the batter. Crack the topping eggs into the molds, distributing them according to the size of each mold. Sprinkle the chopped spring onions and ground black pepper on top.
- Step 4: Bake in the Air Fryer
Preheat the air fryer according to the appliance instructions. Place the molds inside and bake at 140°C for approximately 40–50 minutes, following the original recipe. Check that both the cake batter and eggs are fully cooked before removing the bread.
- Step 5: Serve
Remove the molds from the air fryer and allow the egg bread to cool slightly before serving warm.
