- 1000 gram flour (SPB, Balance or Golden Buffalo)
- 620 gram water
- 40 gram sugar
- 15 gram salt
- 10 gram dry yeast (Mauri Red Kangaroo, SafViet, etc.)
- 5 gram bread improver
- 40 gram shortening

- Step1: Making the Dough
- Dissolve sugar and salt in water.
- Pour flour, yeast, bread improver and the above solution in the mixer and mix at low speed for 1 minute.
- Add shortening and mix at low speed for 1 more minute.
- Mix the dough at high speed for 5 to 7 minutes.
- Step 2: Cutting and Moulding
- Divide the dough into 750 gram pieces for traditional sandwich or smaller depending on the pan size.
- Rounding and rest for 10 minutes.
- Use the roller to flatten the dough to an oblong sheet, then shape it into a log.
- Place the log to the slightly greased pan.
- Proof the dough for 1 to 1.5 hours at 30 degree Celsius and the humidity of 80%.
- Step 3: Baking
- Bake the dough at 230 degree Celsius for 35 minutes.
