Ingredient

  • 1000 gram flour (SPBBalance or Golden Buffalo)
  • 620 gram water
  • 40 gram sugar
  • 15 gram salt
  • 10 gram dry yeast (Mauri Red Kangaroo, SafViet, etc.)
  • 5 gram bread improver
  • 40 gram shortening

  • Step1: Making the Dough
  • Dissolve sugar and salt in water.
  • Pour flour, yeast, bread improver and the above solution in the mixer and mix at low speed for 1 minute.
  • Add shortening and mix at low speed for 1 more minute.
  • Mix the dough at high speed for 5 to 7 minutes.
  • Step 2: Cutting and Moulding
  • Divide the dough into 750 gram pieces for traditional sandwich or smaller depending on the pan size.
  • Rounding and rest for 10 minutes.

  • Proof the dough for 1 to 1.5 hours at 30 degree Celsius and the humidity of 80%.

  • Bake the dough at 230 degree Celsius for 35 minutes.
